With the ingredients in this kit, you can create award-winning spare ribs in your own garden in 8 simple steps. Over the years, the seasoning, Rib Bath and BBQ sauce have been refined by Smokey Goodness pitmaster Jord Althuizen. Fine-tuned to the exact recipe that helped him win first prize for his spare ribs on multiple occasions. Now it’s your turn. Fire up the BBQ, follow the steps, and serve ribs that will leave everyone speechless. Oven preparation: follow the same steps and temperatures as described. The ribs will not develop the smoky flavour that comes from a BBQ or smoker.

AWARD-WINNING SPARE RIBS IN 8 STEPS
1. Prepare your BBQ 
Prepare your BBQ or smoker for indirect grilling or hot smoking. Bring the temperature to 110–130°C.
2. Prepare the ribs 
Remove the membrane from the bone side of the spare ribs. Pat the meat dry and trim away any loose pieces of fat or meat.
3. Season generously
Coat the ribs all over with oil, sriracha or yellow mustard.Then generously sprinkle with Smokey Goodness Pig Powder.
4. Smoke the ribs
Place the ribs on the BBQ with the meat side facing up. Add a few wood chunks to the hot coals and smoke the ribs for 2 to 2.5 hours. Spray them occasionally with water or a mixture of apple juice, apple cider vinegar and whiskey. The ribs are ready for the next step when the rub has set nicely and the meat has developed a deep colour.
5. Wrap them up
Place a sheet of aluminium foil on your work surface. Spread 1½ tablespoons of Smokey Goodness Rib Bath onto the foil in an area roughly the size of the rack of ribs. Place the ribs, bone side up, onto the Rib Bath. Spread another 1½ tablespoons of Rib Bath over the bone side. Carefully fold the foil closed, 
ensuring the bones do not puncture the foil. Return the wrapped ribs to the BBQ with the bone side facing up.
6. Cook until tender
Continue cooking the wrapped ribs for 1.5 to 2 hours, until the meat is tender and the ribs bend easily when lifted.
7. Glaze with sauce
Carefully unwrap the ribs and pour the remaining Rib Bath from the foil into a small bowl. Mix in some Smokey’s Finest BBQ Sauce and brush the ribs with the mixture. Return them to the BBQ for approximately 10 minutes, until the sauce is sticky and glossy.
8. Slice and serve
Allow the ribs to rest for approximately 5 minutes. Cut between the bones and serve immediately.

Pitmaster Pro Tip: Want true competition-style ribs? Then, just before serving, brush them one final time with a thin layer of warm Smokey’s Finest BBQ Sauce for extra shine, sticky fingers and envious looks.
